1. Did you weigh your flour and water, or did you use cup measurements?
2. Before you added your yeast, did you mix your water and flour an hour earlier to help develop the gluten?
3. Try a no-knead method, over flouring is also an issue with improper kneading
4. If it is too late, you can put it in the fridge overnight and bake in the morning
5. Try adding steam to improve the oven rise
