#GM everyone. Got to enjoy some eggs fried in tallow this morning. I read awhile back an article about the best fats to fry eggs in, and they'd concluded that out of all of those tried, a combination of canola and butter was the best outcome, and until now, I'd have agreed with that assessment, health issues aside, based on the overall texture and flavor of the eggs. And avocado oil and butter was pretty close to that outcome as well. But tallow...man, what a game changer. Even if seed oils were healthier, I don't think I'd go back.
