Centralized encryption means if the single central part of the service gets hacked every user gets leaked. This the the same as unencrypted. It also means your data leaks if any user of the service is targeted. See PCI compliant credit card merchants getting hacked as proof that centralized encryption is equivalent to no encryption once the centerpiece falls.

End to end encrypted, aka e2ee, means they must hack you or another recipient of the communication to gain access to your data. This is a higher difficulty and requires that you or someone you talk to be a target for your data to leak.

This concept may be second nature to most nerds but not everyone here is a nerd and I encounter a lot of confusion about this concept in the real world.
