For my American friends looking at options for leftovers from Thanksgiving, you could try this dish made from leftover mash potato. We commonly make it the day after Christmas called Boxing Day in the UK,
Boxing Day was so named after wealthy people would give servants "special boxes" of treats and gifts to thank them for their hard work. The servants would then take the gifts home to share with their families.
"Bubble and Squeak", which is fried left over mash potato which we include cheddar cheese, spring onions and left over vegetables, broccoli, peas, carrots etc...
Also adding an egg and some plan flour helps bind it together. Here is a more traditional recipe:
The name "bubble and squeak" likely comes from the noises the ingredients make when they are fried together in a pan. Since cabbage contains a lot of water, it tends to make "bubbly" noises as it wilts and cooks.
