The chef is named Douglas. And yet, somehow, he looks Mexican. And he's lazy. And he's Rita's ex-husband who, somehow, still works in the restaurant. And he's not actually a formal chef but learnt everything he knows from Rita's father.
At one part, Doug drops a piece of chicken on the floor. "It fell", he says. Picks it up and back on the pan it goes.
"You just dropped that on the floor".
"Yeah".
"You dropped it on the floor".
*continues to cook the floor chicken*
"You just dropped it on the floor".

Unable to get through to him, Ramsay fetches Lisa to order Doug to get rid of that chicken. Reluctantly, she tells him. And he reluctantly tosses the chicken into the trash. I have a feeling people that go eat at that restaurant are routinely fed floor chicken.
