You can also sweeten with honey or brown sugar. I prefer it less sweet but it's definitely a preference thing. If you're starting with tart apples (granny smiths frex), use less lemon juice, similarly sweet apples might need more. It will store forever in the freezer so I make it in big batches. 8 lbs of apples needs a 10 qt pan.
