2T sugar
2 eggs
3/4c sugar
1/2c oil
2t salt
2c water
Zest of one lemon
7/8c flour
Dough will be very loose. Let rise once. Deflate. Let rise again. Deflate. Put in hotel pan. Mash down hard leaving dents. Pour melted butter on top. (Rubbing hands with melted butter prior to mashing down helps.) Top liberally with cinnamon and sugar. Let rise. Bake for ~30 minutes @ 325° (might need a touch more, use your instincts) Out of the oven cut large stripes and serve piping hot with coffee or milk. Enjoy.
