Called a hail Mary. Whipped up and chili Colorado and threw it in the crock pot with cubed chuck roast and onions. Gonna let that go a few hours, shred it, layer it over riced cauliflower, smother it in cheddar, Iberico and manchego cheeses, then bake it casserole style. Smells good in here right now.
