- going into the applications settings of your phone ("default apps")
- opening "all applications"
- using the search button at the top, type "assistant"
- open the result item
- click "deactivate"
?
You might also want to search it in the play store and uninstall it (yes it doesn’t really uninstall it, just reset the factory version of it) + disable auto update. (using the "three dots" menu at the top).
