Because people keep wanting new fancy features?

I look at the web-browsers of yore, and modern interpretations of them like dillo(1) and it's good, reliable, (reasonably) secure, and trustworthy. It just doesn't have the latest CSS3 features or run JavaScript (these are benefits to me).

And I can have 100+ tabs open in Dillo and the whole thing consumes less RAM than a single blank tab in Firefox or Chrome/Chromium. 😑
