Since I was feeling curious, I did a little searching.
Looking into it, dis- can also mean completely, or utterly. So actually, apparently disgruntled is more like being *really* gruntled.
And gruntle, in a development that really shouldn't surprise me, comes from grunt, then then started being more like "to grumble".
So I guess technically being disgruntled is being very grumbly.
