Caprese Salad
1.5 cups fresh (important!) mozzarella, sliced into discs
1/4 cup good Balsamic vinegar
2 large, ripe tomatoes, sliced and halved
1 bunch fresh basil leaves, torn
1/3 cup red onion, finely chopped
1/4 cup good olive oil (California Olive Ranch is a solid choice)
1 tablespoon dried oregano
Black pepper to taste
Assemble all ingredients in a large bowl, toss gently to mix. Serve cold.
