Coffee or chemistry nerds - I want to try create a reliable indicator for well/over/under extracted coffee using chromatography and filter paper. I want to start with espresso. Are there any suggestions for the best solvents for the components that have the biggest indication of extraction or flavour? Is it even worth trying for component separation or is mere “amount of solubles” a good enough indication?
