When I use Hoffman's Dark Roast method in my chemex, I always end up with a cone of grounds stuck to the filter.
When I try to brew medium roast, there's never a cone and often the grounds for a little dome on the bottom.
I see it is a classic coffee group (nprofile…y5xe) debate which is better, with the suggestion to go for both effects and see which you like, but I don't know how to get a cone with the medium roast. I poured the water as fast as I could and the grinds were slightl concave.
