The good thing is, every part is it's own story, with its own characters, world, etc. It's mostly concepts that are shared throughout the series, like the currency (gil), the chocobos, the crystals... So that means you can start with any part you want!
But that leaves you with a lot of choice. 😅
I don't think 11 and 14 are good representatives because they are mmo rpg's and I consider them more as spinoffs (even though they are numbered as a main installment).
Then there is the evolution. There are some good older parts but of course they aren't that great to look at anymore, even though there are remasters available. Does the graphic quality impact your enjoyment?
Each part also switches battle system. Most games are turn based. It's only since FF 12 that they experimented with a realtime approach. Therefore a good question to ask yourself is which kind of battle system you'd prefer.
Many people's favorite part is 7, and I think that might be mine as well. This one is also being completely reworked (part 1 of the remake already being released, part 2 coming). Instead of turn based like the original, this one has real time combat. I personally like both, but the remake looks absolutely fantastic. ✨
My first FF was 10. Turn based and quite linear but loved it. Wonderful story!

I almost forgot 9, which is one that truly hits the feels.

Maybe I should just advice 7. Either the original (grab a remaster) or the remake. I think 7 is a good display of what Final Fantasy is about, and you can't really go wrong there. 😊
