I have a LARGE amount of cucumbers. We love pickles but honestly I am not sure that we will eat that many so I am not sure its worth it to can them. Any one have any recipes that are good for lots of cucumbers? We love summer salad (tomatoes, cucumbers and onion) and definitely do that but would love some other options.
