I use an iPad positioned underneath my monitor, so I can just flick my eyes down to read the chat. I know some people that use their phones. Most people just use a second or third monitor. It's very simple.
PeerTube (and other streaming platforms) allow you to pop the stream chat out into its own tab / window. Then you can zoom the font size to whatever you want.
