Yeah the butter needs to come out early so it's soft by the time you make/spread the filling. Baking with regular yeast I usually take it out as I start; that gives about 1 1/2 hours give or take to soften. It's definitely one of the things which comes with experience, the recipes don't tell you! What's your rising agent? Overnight is a long time for the dough to rise - usually I give the dough 60-90 minutes but I use regular (not dry) yeast, then another 45-60 before the oven.
