Mandarins are far less acidic than I thought. Less than pineapples in fact. I had to add roughly 12 teaspoons of citric acid to the stuff to bring the pH down to something between 3 and 4. Whomever said that citrus fruit is too acidic to make wine out of was an idiot! 🤣
