I have added a new ingredient to the dried fruit compote, diced ginger. Not sure if it will become soft but it smells wonderful. Also worked out what the wonderful stiff yogurt we had at the hotel was, lebkeh. Greek yogurt with all the extra whey drained out of it, amazing what a difference that makes to taste and texture
