There are functional minimalistic GUIs (personally, I'm using herbstluftwm).
But "r/unixporn" ist striking me more like "wallpaperporn". Always the same terminals with neofetch, htop or other tools), but different wallpapers. Years ago made a single (and my only) post: a screenshot with terminals and no wallpaper, just a black background and everyone: "why don't you have wallpaper?"
