Once someone gets their legal name at birth:
• nombre (first and middle names, no real limit to how many. My kids don't have middle names, but some people have 3.)
• apellido paterno (father's family name)
• apellido materno (mother's family name)
they can just keep the same name their whole life. That's goes for women, too; there's no expectation or custom to change her apellidos when she gets married.
I think there might be an exception with some aristocratic types who want to flaunt the social status of the marriage. They might append "de <fancypants-surname>" to their apellidos, but they keep all the original apellidos. It's super uncommon, so I'll need to check up on that.
