Years ago I came up with a recipe for a sauce so my kids could enjoy "buffalo wings", without having to deal with chilli, while I had traditional buffalo wings.
I made them tonight, and my son has demanded I post the recipe.
125ml of good quality shoyu
125g of good quality butter
kuzu starch or cornflour mixed with some water
Melt the butter in the soy, add the kuzu starch and water, a bit at a time, until it thickens a bit.
It's basically a sauce used to make onigiri, thickened
