I would guess that it'd be very similar to regular disaster recovery in that you'd need to stand things up, then import database dumps for postgres/redis, put the public directory back in place with all the content, put any other custom configs in place and then regenerate the elasticsearch indexes and whatnot.
I'd also love to hear about other people's experiences in making that move, though!
