They are actually well-behaved companion plants. The roots don’t crowd out neighbors and suck up nutrients. I have them growing as companions to potted tropical trees.

If you grow them in raised beds or in pots, the leaves become large and succulent. See pic below.

I grow them mostly for their leaves. The roots are very bitter and once you harvest the root, well that’s it. You’ve killed the plant.
