It apparently MUST use /etc/nixos/configuration.nix, which is quite stupid. This meant I had to tinker with the base nixos installer environment (GNOME, no CTRL+ALT+T for terminal, language wrong, non-shared bash history, no git, git-annex, not even vim, etc.) which added a lot of friction. Also didn't help that I had a wrong boot.initrd.luks.devices set 🤦
