We should be sceptical of all things, and yet childishly curious at the same time 🤗 This is the integration of the inner child into our adult selves.
Personally, I see no contradiction between what you say and the quote I posted. I believe it is true that no one can truely Know God in this physical form, yet we may come to know aspects of God, through his reflections in creation. But I'm just a student, not a sage 🤷🏻♂️
