You can add or edit AltText afterwards!
I use the Toot! app to edit my posts. It gives also reminders when posting without AltText. In Android you can use Megalodon.
Mastodon 4.1 has also such an option:

👉 Delete the image and add it again with the correct AltText.
I find it handy to make my AltText first in an app for notes. Because I don't like that with a little tap in the wrong place I have to start all over again.
