Your explanation of when to use I versus me makes sense, but the rule I was told as a child was to drop the extra stuff and just use the one that makes sense. You don't say "me am going", so you don't say "you and me are going". Is this simplistic rule always right? Right except some edge cases? Your rule about the subject and object feels more complete, but I find it harder to quickly apply as I'm writing.
