even bad bread tastes great!
I love the recipes in Flour Water Salt Yeast by Ken Forkish (It is on libby). The first one (Saturday bread) is pretty low energy. It uses 1kg of dough, so I usually split off half before shaping and the second half goes toward pizza dough.
