So far, in terms of the money and equipment I have, my best backup option seems to be as follows:

I purchase a hot swap SATA bay adapter and install it in my workstation. I buy SATA hard drives in the 1TB range for as cheap as I can get them (I have two sitting spare already). I partition the drives with two partitions, a roughly 90/10 split. The 90 partition is a tar archive holding the backup. The 10 is a filesystem which holds .par2 parity files for the 90.

Backing up is done with a script that zeroes the drive, lays down the two partitions, formats the parity partition, creates the tar data stream, writes it to the raw device, and then creates the parity archives. The result is a backup which can be repaired if up to ~10% of the data is corrupted, at minimal cost.
