Some #vegan chefs on youtube these days have an approach that goes against my culinary instincts. Think about something simple like a BLT. You get fat and protein from the bacon and starch from the bread. I would just infuse tofu or seitan with smokey savory flavors and fry that. But I've seen a technique using daikon that's supposedly very convincing. Vegans these days will put fried daikon on high protein bread. For me, meat replacement should be protein-laden (except mushrooms are ok).
