1 pack of mushrooms (preferably small ones, can also use frozen)
Oil to cover the bottom of the pan thinly
Saute the onions on a low heat, after a couple of minutes add the mushrooms and sauté everything until soft, just starting to go brown. (Several minutes, this is the trick to bring out the taste in the mushrooms)
Spices: to taste, but I usually put in a half teaspoon of chilli powder (perhaps 1 teaspoon - it depends on strength of powder) (or 2-3 home grown devil chillis, chopped)
Garam masala, 2 teaspoons
Salt
Add spices to the onions and mushrooms and sauté for a minute to two
2 cans of chopped tomatoes,
1 can of coconut Frozen spinach - I usually put in about 6-8 chunks 1 US lentil cups of lentils approx (I typically grab a small bowl and use that)
Put all this in together then cook on low heat for about 30-40 minutes, with the top off the pan.
