I love rats. They're incredible animals, and so smart.

I had two as pets when I was a kid. They loved bananas and grapes, and we less enthusiastic about carrots. I used to announce what food they were getting before bringing it in to them.

When I'd say "grapes" or "bananas" they'd run around excitedly.

When I'd say "carrots" they would come out but were clearly not pumped up about it.

Eventually, I decided to test them by announcing the wrong food to see if they truly understood.

When I would say carrots, they'd come out unexcitedly, but would run around happily when they saw it was actually bananas or grapes.

If I announced "bananas" or "grapes", they'd be jumping for joy, and when they saw carrots, they wouldn't take right away and would look around as if they were trying to see the bananas or grapes they'd heard me announce.

I don't know if there have been scientific studies on rats and human language, but my experience makes me think they can learn some vocabulary.
