Cutting down the super-wide handlebars is one of the first things I do on a new bike. They put them even on bikes sized for kids and small adults; I can't imagine why. Cutting them down takes about 5 minutes with a pipe cutter; the hardest part is getting the grips off first. (Maybe that's why they put wide bars on -- maybe they assume everyone will cut them to their preferred size.)
