I'm wondering what percentage of people freaking out about Apple Advanced Data Protection actually have it enabled.
It isn't enabled by default in any region.
If you use Microsoft Windows, everything is automatically backed up to OneDrive -- and they don't have any equivalent feature. Law enforcement (and approved Microsoft staff) could and can always retrieve customer files.
