Finally moved my patents #homeassistant from a Raspberry Pi 2, to a cheap Minisforum Z83-F. It's got an Intel Atom X5-Z8350 (4 cores), 4GB RAM, and 64GB eMMC. It's not super powerful, but for my parents' use case, it's perfect. It's performing a lot better than the raspberry pi (UI is much faster and responsive).
