We got 16 steaks at about 1" each, 2 lbs of scraps so well enjoy ribeye "tacos" this evening, and about 1.75 lbs of fat that well process into tallow.

It's really neat to see the changes in the steak as you progress down cut, form the chuck side to the sirloin side.
