Hooray, the stinky #tofu is ready to jar up. It will be rolled in salt and chilli flakes, the covered with slightly diluted shaoxing wine and topped with sesame oil. Then it sits in the fridge for 4 weeks before use!

Apparently it will have a creamy texture and a cheesy sharpness. Will keep indefinitely, and mellows over time.

It is already very stinky, but never gets as bad (so they say) as true stinky tofu. 👃◽️◽️❕
