It's that time of the year when I'm trying to cook and bake from my pantry without buying anything. It's even trickier when you need to make a few things gluten free as well. When ever I bake bread for the rest of us, I like to make a little something gluten free for my daughter. This morning before I got any wheat flour anywhere in the kitchen, I make up a crumbly thing with gf oats, a lump of butter, the rest of a small bag of almond flour, some brown sugar, cinnamon and an egg. I spread over the top some canned plums. I did not measure anything or follow a recipe. It's actually delicious. The deep red juice from the jar of plums is nice cut with club soda or tonic water to make a mocktail.
I then womped up my usual brown bread recipe which is rising now. Later I'll make some meatballs to have with some plum dipping sauce I made last summer. Maybe some rice will go good with that. The carrots are holding up well in the root cellar along with some beets and parsnips. The favourite around here seems to just be a grated carrot salad with a lemon honey dressing.
