The technical transition (according to food agencies) from lamb to mutton, I believe is 14 months.
Animals absorb the environment and conditions they live in. If they are contained in high-stress environments, the meat is flooded with stress hormones and stink. If they are relaxed in safe natural environments, the flavor is lighter and cleaner.
Meat from old rams can have strong flavor due to the high hormone levels. But some people prefer it.
