oh, yeah, i know about how it's got a very high proportion of water of crystallisation, 6 mol per mol iirc... that's why you bake the crystals to use as a drying agent, it's the cheaper kind of drying agent, but a little easier to handle and prepare than sodium sulfate.
salt without a little MgSO4 doesn't taste as good... epsom salt is sweet and bitter, which brings out flavours very well
