You know that either buns or potato salad would be perfectly sufficient sides on their own and Germans traditionally never eat those two together?
Makes no sense to have two carb sources in a meal.
I'd recommend going with the potato salad.
Sausages in buns is more of a to-go thing in Germany.
And putting Sauerkraut with that is pretty much an American hotdog thing.
