a watt-hour is literally watts * hours. A 500Wh battery can deliver a sustained 500W of power output for 1 hour.
How much energy you need in battery storage depends on much power your motor can draw and how much time you need at full draw. Running at less than max wattage should give you longer runtime, as well.
