You love ramen and want an easy marinated egg recipe? I got you! I have made these multiple times and they are amazing!
Ingredients:
-6 room temperature eggs (or run them under the facet until they are room temp like I do)
- 1 tbsp of vinegar
Marinade:
- 1/2 cup of water or veggie stock
- 5 tbps of soy sauce
- 4 tbps of Mirin
- 2 tsp of dark soy sauce (this is optional, but gives fantastic color)
Instructions:
Combine all marinade ingredients in a quart sized Ziploc bag and set aside.
Boil water and add vinegar. For that jammy yoke, we want soft boiled eggs. Gently lower eggs into water and cook for 6 minutes (add another 6 minutes if you want solid yokes). Remove to ice bath. Let sit in the ice bath until cool.
Carefully peel the eggs and put in the marinade. Get as much air as you can out of the Ziploc and close it up. Put it in the fridge.
Let it sit for at least 1 hour, but honestly overnight give the best flavor.
Adding a marinated egg, some sliced shitake mushrooms, and some seaweed (cut up some nori) takes store bought ramen to the next level for just a few extra dollars.
