whether that's first-person and third person casting animations, dodge animations, or even whole traversal systems and accompanying animations, it is absolutely wild and there are whole YouTube vids dedicated to just them 
personally, I also go for a few of the major magic overhauls because of just how much they add to the game, along with a patch that allows them to be distributed to NPCs as well
(also, some College of Winterhold overhauls because the base college is super-sparse)
Serana Dialogue Overhaul also got a major update a year or so back, if fleshed-out followers is your thing, and aside from the old lighting and effects mod, I believe there's another mod called Lux that is an alternative to ELFX
