I want to rant a little about the idea of culinary appropriation.
When I lived in NYC I saw combinations of cultures and flavors all the time.
Fancy places called them "Fusion" but I saw plenty of places that were just that a couple was from two cultures and opened a restaurant together, or a child of two cultures opened up a restaurant, etc.
My favorite bagel shop in NYC is owned by Thai folks and they serve traditional bagels made by hand, boiled, alongside Thai Iced Tea.
