Years ago, when my grandparents were still with us but ailing, my extended family would all travel to their house for #Thanksgiving. My mom and I did most of the cooking, including a giant turkey. Despite harmonious family dynamics, making a meal with such a tricky main dish for 11-13 people was horribly stressful. Years later it’s just the 3 of us, and no turkey because we’re now veg. Having a chill, make-ahead sides-centric Thanksgiving is such a joy by comparison. I savor the cooking/baking.
