I was feeling ambitious today, so I made some applesauce. But, I had some extra (too little to put in a canning jar) so I made muffins. As I was grating my carrots, I noticed some in the bag were starting to go off, so I peeled the lot, diced some to blanch and freeze, and used the rest to make a big batch of mirepoix. I used the skins and bits from the onion, celery, and carrots to start a pot of vegetable stock. Anyway, I got about two litres of diced carrots frozen, and about six quarts of mirepoix canned (I did not can them in quarts, because that would be crazy). Then I made dinner.
I may have overdone it just a bit.
