I'm not great at keeping starters (or houseplants) alive. I've had very limited success.
I let a poolish (?) develop in the fridge for 3-5 days, and then an overnight (sometimes longer) first rise. It's not *quite* sourdough, but it's close. Fluffy but chewy crumb, cracking crust, enough of that fermenty-sour flavor that someone who doesn't bake wouldn't know the difference.
I loved my Palm, but I'm now fully committed to the cult of Zombie Steve Jobs. I can never go back.
